Alife Foods, a German-based food tech startup, has announced that its developing a cell-cultured schnitzel in partnership with Fuchs Gruppe, a German spice manufacturer, and Lab Farm Foods, a New-York based cultivated meat company. Fuchs Gruppe will work with Alife Foods to develop flavor profiles, while Lab Farm Foods will be a production partner for Alife Foods in the US.
Alife Foods uses cultivated beef, wheat protein, panade (wheat flour mixed with vegetable oil), and methylcellulose (a derivative of cellulose that is used as an emulsifier/thickener) to make its cultivated schnitzel. The company also uses plant-based growth media to grow its beef cells.
Alife Foods has been conducting taste tests and sensory evaluations since Q4 2021 and aims to present a prototype to investors by the end of 2022. The company also plans to commercially launch its schnitzel in 2025, noting that it needs to overcome regulatory approval and scaling up challenges in achieving its target.
