Aqua Cultured Foods, a Chicago-based plant-based meat startup, unveiled that its new development in its fermentation technology has enabled it to double the biomass output of its plant-based seafood, which includes alternatives for whole-muscle cut tuna and whitefish, popcorn shrimp, calamari, and scallops.
The company claims the new advancements will help accelerate the production and commercialization process of its alternative seafood. Aqua has also filed five patents for its proprietary process and is preparing for its next funding round. The company has plans of introducing its products with select partners in 2022 to test consumer acceptance of its seafood alternatives.
