Novel Farms is a startup that uses synthetic biology to develop 3D bio scaffolding to produce its whole-cut gourmet cell-cultured meat.
Novel Farms claims that its cultured steak has improved structure and taste similar to slaughtered steak by using technology that enhances the culturing of fat and muscle cells to achieve marbling. In August 2022 , the company developed what it claims to be the world’s first lab-grown pork loin using a proprietary microbial fermentation process that reduced production costs by 99.27%.
Funding and financials
In August 2022 , the company raised USD 1.4 million in a pre-seed funding round backed by Big Idea Ventures Joyance, Sustainable Food Ventures, and CULT Food Science Corp, among others. The funds were planned to help with additional hires and scaling up of production.
Further, in September 2023 , Novel Farms received a USD 999,967 Small Business Innovation Research (SBIR) Phase II grant from the National Science Foundation (NSF). The funding was earmarked for team expansions and scaling its proprietary scaffolding platform.
