Novel Farms, a California-based startup using synthetic biology for its whole cut cell-cultured meat products, announced that it has developed what it claimed to be the world’s first lab-grown pork loin showing marbling and texture. It further stated that its initial focus will be on conventional pork followed by iberian pork.
The company mentioned it has developed a proprietary microbial fermentation technique to build scaffolds for cultivated meat production, without using biomaterials like alginate, cellulose, and mycelia to help cells adhere and form the structure of the meat (a technique used by most peers). Novel Farms claimed this would allow them to successfully grow whole cuts of meat while reducing production costs by 99.27%, leading to scaled production and price parity with conventional meats.
