Revyve develops plant-based egg whites

  • Swiss-based food tech company Revyve has developed a plant-based egg white replacer made from upcycled spent brewer’s yeast. The product is created by processing the yeast into proteins and fibers at low temperatures. The process is claimed to be free of enzymes and harsh chemicals.

  • Revyve’s egg white replacer utilizes upcycled spent brewer’s yeast, a renewable byproduct of beer production. Given the large volumes of beer production worldwide, the company has an abundant supply of the ingredient. Revyve claims the product is ideal for use as a binder in plant-based meats and for adding umami flavor.

  • Founded in 2019, Revyve was formed as a partnership between Fumi Ingredients and the world-leading brewer, AB inBev. The company develops sustainable proteins and fibers with unique functional properties through a proprietary process. The company has also developed a protein-fiber blend designed for use in extruded meat alternatives and a product that replaces dairy or eggs in sauces by providing emulsification and texture. 

  • Analyst QuickTake : The use of upcycled products from food waste and other byproducts to create ingredients for alternative meat and dairy contributes to a sustainable circular economy that can lead to reduced food wastage. Yeast is a naturally occurring microorganism used for thousands of years in food and beverages such as bread, wine, and beer. Recently, yeast has been used as an ingredient in plant-based proteins such as eggs, dairy, and meats. Yeast provides high protein content, easy digestibility, and a sustainable form of production, as it is an industrial byproduct that does not require cultivation. In 2022, we observed several instances where yeast was used for the production of plant-based meat and plant-based dairy and egg by companies such as ProteinDistillery , NextFerm Technologies , and MushLabs .
