CellMEAT, a South-Korean cell-cultured meat startup, has debuted a prototype of cultivated caviar based on the Osetra variety.
According to the company, the cultivated product comes in different shapes and sizes, providing better texture, and a “less fishy” flavor compared to traditional caviar harvested from sturgeons.
CellMEAT also announced that it has other seafood prototypes in the pipeline facilitated by its USD 8.1 million Series A funding. Its cultivated Dokdo Shrimp is ready for commercialization; subject to regulatory approval.
