Steakholder Foods, an Israeli cell-cultured meat company, has unveiled a plant-based 3D-printed eel. Claimed to be the first of its kind, it utilizes the company's proprietary DropJet 3D printing technology and a unique ingredient list to mimic the complex texture of the real eel.
Steakholder Foods claims its DropJet technology significantly reduces the number of ingredients needed compared to standard plant-based counterparts. While the 3D-printed eel currently uses plant materials, the company plans to use cultivated eel cells in future renditions once economies of scale permit more cost-efficient cell production.
Analyst QuickTake: In 2023, Stakeholder Foods received a grant of up to USD 1 million funded by the Singapore Israel Industrial R&D Foundation (SIIRD) to develop 3D-printed structured eel and grouper products. This project was in collaboration with Singaporean-cultivated seafood company Umami Meats, which provided the cells for the printing process.
