Nosh Biofoods, a German biomass fermentation startup, has developed a novel mycoprotein that enables producers to produce single-ingredient meat and seafood substitutes, paving the way for clean-label meat and seafood alternatives.
The firm claims its new ingredient is cost-competitive with current alternatives and offers a savory-tasting, color-neutral product with inherent binding capabilities, allowing the manufacture of 100% mycoprotein analogs without needing artificial additives or binders.
Nosh Biofood, founded in 2022, leverages fungi biomass to produce animal-free protein for the food industry. The company's proprietary fermentation platform enables sustainable and cost-effective solutions for manufacturing functional food ingredients and animal-free proteins. Furthermore, it plans to scale production, aiming for an annual yield of 5,000 tons in a facility set to be operational by 2025.
Analyst QuickTake: Due to ingredient regulations and consumer preferences, demand for clean-label products has grown over the past few years. Recently, Wamame Foods launched Outlier Protein , a high-protein ingredient with a short ingredient list, allowing the creation of clean-label products. Furthermore, Mush Foods partnered with Pat LaFrieda Meat Purveyors to launch a clean-label mushroom-beef blended burger made using its 50CUT product.
