Founded in 2019, Shiru leverages the precision bio fermentation process and machine learning algorithms to create plant-based ingredients. The company uses a proprietary discovery platform, Flourish, to identify proteins that offer similar taste and texture properties as that of animal-based ingredients. As of October 2021, Shiru had six colorless and flavorless ingredients in its portfolio that can be used in a variety of food products such as packaged baked goods, sauces, burgers, and yogurt. The first commercial items utilizing Shiru's ingredients will be available on grocery store shelves by early 2023, the company reports.
In August 2022 , the company partnered up with Belgium-based producer of bakery ingredients, Puratos to trial and develop a new egg replacement for baked goods
In October 2021, the startup secured USD 17 million in a series A funding round led by S2G Ventures. The funds will be utilized to double the company’s headcount to above 40, adding staff to research, fermentation, marketing, and business development over the next 12 months. In addition, the company expects to relocate to a new headquarters in Alameda by 2022 and begin scaling its manufacturing operations.
