Swiss cell-cultured meat startup, Mirai Foods, announced developing what it claims to be the “first thick cultivated steak” using its proprietary fibration technology platform. The company has filed three international patents for this key technology.
This innovation was made possible due to Mirai’s bioreactor, The Rocket, containing fibration technology—which the company claims increases efficiency and reduces production costs, along with allowing tissue cultivation.
Cultivated fully-mature muscle fibers (which are connected by enzymes and supplemented with cultivated fat tissue) are placed in the bioreactor for five to 10 days, resulting in the development of a tenderloin centerpiece that allows steaks of any thickness to be cut out.
Mirai Foods also announced a partnership with Swiss meat and food producer, Angst AG, by taking a stake. This reflects the company’s strategy of expansion through partnerships.
